Oh the joy of soup

In fall, I love soup. It is no secret. I make new recipes for soup all the time, the entire fall. I have noticed that men don't really like soup. I keep wondering if it is because of the low meat content, or if it is just not filling enough for them. For me, this soup was perfect. It even made me feel warm and cozy.

Chicken Rosemary Soup

whole chicken, innards removed and rinsed
large potent onion (not sweet)
4 sprigs rosemary
2 bay leaves
1 Tbs course salt
Water to barley cover

Add later:
Tiny noodles
4 green onions (sliced, saving one for garnish)
parsley (garnish)

Cook for 5 hours on low heat in a crock pot. Transfer liquid to a large pot. De-bone the chicken. The chicken should just fall off the bone at this point. I kept the breast meat in reserve for something else and dropped the dark meat back in the soup. I then added the noodles and three of the green onions. I let it get to a boil to cook the tiny noodles, and that was it. If it isn't salty enough, add one bullion cube.

You could add anything to this soup. Celery, carrots, more sweet onion after the broth was made... that would have been wonderful. But I kept it simple this time.

It was so terribly good. I had it with a romaine and red cabbage Cesar salad. YUM!

I love a good chicken soup, and rosemary is one of the best herbs to go with it.
I know this is a bit off topic, but I did braised chicken thighs yesterday with rosemary and vanilla. It sounds odd, but it really works.

Val, I lol when I read your men don't like soup comment! It is true in this house, when I make it Pete is like, okay that was good but where is the REAL food (aka meat) I too love making soup in the fall, it is 40 degrees out as I type this, and I think I will be making some soup tomorrow, thanks for the inspiration!

Oh I love soup this time of year. Hmm maybe that is what I will get for lunch, a big bowl of soup..

Actually, we all love soup around here. I make it at least once a week, sometimes twice. I usually serve with salad and bread (often homemade from freshly ground wheat).

Since we do not have a microwave, soup is often a mixture of leftovers (grains, meats, veggies) with minced garlic, and onion, some organic chicken broth and herbs/seasoning added.

I love making carrot lentil casserole and using the leftovers as soup. Yum!

A family of four little men loves soup? That is awesome! Your soup sounds great too... I love lentils. My dh... not so much. ;)
