Chili Rellenos



One of the guys from the farmers market gave me a bunch of Anaheim Peppers on Sunday. My plan was to make taco salad tonight out of the lettuce, cilantro, and organic beef from the farm and then tomatoes from my own garden. I thought the Rellenos would make a wonderful addition to my local, but completely delicious meal with my chickens egg and cheeses from Oregon.

My process:

Broiling.

Charred pepper ready to peel.

While I was peeling the peppers, I whipped the egg whites.

Peeled peppers.

Egg yolks, whipped.

Sliced and deseeded peppers.

Stuffing with cheese.


And a token bad pic of me, but I look happy. So I will leave it in the line.

I used a toothpick to keep the peppers together after stuffing.

Floured and ready to be battered.

Mixed fluffy egg whites and beaten egg yolks.

Dipped in the batter and placed in a 1/4 inch of olive oil (I know that olive oil isn't really authentic, but it was in lieu of lard or canola oil).

Results:

Oh, and it was really really good.

Yum! My mom makes killer Rellenos too! You're so funny how you take a shot by shot of how to cook it. Good idea!

Habit. I started taking pictures of my food when Laurie started her blog. She has moved on, and I have for the most part as well, but I still like to take blow by blow pics of the food... just for the progression. Esp when it is something complicated. I used to call them cook-&-shows. On here, under recipes, I have an applesauce one, and a zucchini muffin one from way back when. I am planning on making more. ;)

Oh and BTW, reheated homemade chili rellenos are HOT. LOL! I have never had 'hot' ones from the resturant, which is the difference (my hispanic friend would say) between 'authentic' and 'not'... but wow. Those will put hair on your chest. (figure of speech... hopefully).

My mom used to make chili rellenos, and I've never had any as good as hers. To my knowledge (and I have all of her recipe boxes) she did not use a written recipe. This looks like what she would have done... thanks for recalling the memory. :)
